Plong\u00e9 dans un cadre authentique qui fait la part belle aux pierres apparentes, le chef a effectu\u00e9 son premier service le 20 juillet dernier. Son objectif est de proposer une cuisine locavore qui \u00e9volue au fil des saisons. Outre des planches \u00e0 partager, il propose deux menus \u00e0 31 \u20ac et 39 \u20ac compos\u00e9s de plats gourmands et inventifs tels que la R\u00e9moulade de courgettes, blanc en neige, truite fum\u00e9e de Banca, la Longe de chez Pierre cuit \u00e0 la minute, fraises et radis caram\u00e9lis\u00e9s ou le Supr\u00eame de volaille, beurre d\u2019herbes, jus \u00e0 la bardane et aubergines. Une belle aventure qui d\u00e9marre pour ce chef passionn\u00e9 et exp\u00e9riment\u00e9.
