En France, l\u2019\u00e9quipe compos\u00e9e d\u2019Oc\u00e9ane Huchard et de Nathan Amran (lyc\u00e9e Edouard Herriot de Sainte Savine) s\u2019\u00e9tait d\u00e9j\u00e0 qualifi\u00e9e pour la rencontre internationale lors du Troph\u00e9e R\u00e9gional. <br \/>Face \u00e0 cinq autres bin\u00f4mes issus d\u2019\u00e9coles h\u00f4teli\u00e8res du monde entier, les deux Fran\u00e7ais ont s\u00e9duit le jury avec leur Fondant de caille, garnitures du terroir Champardennais et leur Entremet craquant, mousse de bi\u00e8re ambr\u00e9e des Ardennes, sph\u00e8res de pommes au miel, sauce caramel aux \u00e9pices (respectant ainsi l\u2019utilisation du miel de la Haute-Marne, du fromage blanc de la Marne, de la bi\u00e8re ambr\u00e9e des Ardennes et de la caille de l\u2019Aube). <br \/>La remise des prix \u00e9tait effectu\u00e9e \u00e0 la CCI Reims-Epernay, en pr\u00e9sence de nombreux chefs dont l\u2019instigateur du Troph\u00e9e, Philippe Mille, MOF et chef doublement \u00e9toil\u00e9 au Domaine Les Cray\u00e8res.<br \/>\n <i>\u00a9 Troph\u00e9e Mille Formation<\/i><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Le 30 novembre dernier se tenait en Champagne le Troph\u00e9e Mille.
