En effet, le restaurant doublement \u00e9toil\u00e9 qui portait son nom a \u00e9t\u00e9 rebaptis\u00e9 Maison Rostang. Et pour cause : la carte de la cuisine est d\u00e9sormais cr\u00e9\u00e9e \u00e0 quatre mains avec l\u2019apport du chef Nicolas Baumann. <br \/>L\u2019ancien second de Michel Rostang perp\u00e9tue ainsi une tradition gourmande d\u00e9marr\u00e9e en 1978 qui fait la part belle aux grands classiques de la gastronomique fran\u00e7aise. Celui qui travaille dans cet \u00e9tablissement depuis 1999 insuffle ainsi des touches de modernit\u00e9 \u00e0 travers des dressages millim\u00e9tr\u00e9s et des sauces l\u00e9g\u00e8res qui se marient \u00e0 merveille aux plats signatures de la maison comme les Cuisses de grenouille en habit vert, ail doux et artichauts r\u00f4tis, coulis de cresson acidul\u00e9 ; ou encore le Homard \u00ab bleu \u00bb confit dans un beurre de noisette, risotto d\u2019artichauts et jus de la presse au Condrieu. <br \/>Cette \u00e9volution montre l\u2019esprit familial qui r\u00e8gne dans cette maison qui est g\u00e9r\u00e9e par Caroline et Sophie Rostang. <br \/>Outre la table gastronomique, l\u2019univers gourmand du chef de 67 ans continue de s\u2019\u00e9toffer.
