Apr\u00e8s avoir tent\u00e9 l\u2019exp\u00e9rience d\u2019une boutique aupr\u00e8s d\u2019un MOF \u00e0 Val d\u2019Is\u00e8re, et avoir auparavant fr\u00e9quent\u00e9 les plus prestigieux \u00e9tablissements \u2013 il \u00e9tait chef p\u00e2tissier chez Paul Bocuse \u00e0 Collonges durant 1 an et demi, mais a \u00e9galement travaill\u00e9 au Kilimandjaro \u00e0 Courchevel, en Suisse, aux Cray\u00e8res \u00e0 Reims ou encore \u00e0 l\u2019Assiette Champenoise \u2013 Vincent Marteau succ\u00e8de \u00e0 Florent Cluzel \u00e0 l\u2019Auberge du Vieux Puits. <br \/>Il apporte sa touche personnelle aux petits d\u00e9jeuners ainsi qu\u2019\u00e0 la carte des desserts et r\u00e9alise des cr\u00e9ations de style moderne en fonction des saisons.
