En charge de la restauration du Comptoir du Clos, bistrot chic, et du Jardin Eph\u00e9m\u2019R, \u00e9l\u00e9gant restaurant entre ville et verdure id\u00e9al pour d\u00e9guster carpaccios, salades et \u00ab ap\u00e9ros barbecue \u00bb, le chef met to<\/p>\n<p>ute son exp\u00e9rience acquise durant de nombreuses ann\u00e9es \u00e0 l\u2019\u00e9tranger (La Samanna Resort & Spa (Saint-Martin), Hilton Bora Bora Nui Resort & Spa (Polyn\u00e9sie fran\u00e7aise), Fr\u00e9gate Island Private (Seychelles), h\u00f4tel Christopher (St Barth) au profit du Renaissance Aix-en-Provence depuis avril dernier. <br \/>\u00ab <i>Apr\u00e8s quelques ann\u00e9es pass\u00e9es a\u0300 l\u2019\u00e9tranger, j\u2019ai \u00e9t\u00e9\u0301 s\u00e9duit par le challenge qui m\u2019\u00e9tait propose\u0301 ici, et surtout j\u2019avais \u2018envie de France\u2019 ! J\u2019ai donc accepte\u0301 cette belle proposition. Une occasion de changer de soleil ! <\/i>\u00bb, confie le jeune chef. <br \/>Au Comptoir du Clos, Arnaud Davin propose une cuisine bistronomique, \u00e0 base de produits locaux et de saison, sublim\u00e9s de quelques touches exotiques. On retrouve un Menu du midi entr\u00e9e + plat ou plat + dessert (du jour) \u00e0 25\u20ac, ainsi qu\u2019un Menu entr\u00e9e + plat + dessert (du jour) \u00e0 32 euros dans ce restaurant accueillant 120 couverts dont 40 en terrasse. <br \/>Quant au Jardin Eph\u00e9m\u2019R, v\u00e9ritable oasis de fra\u00eecheur, le chef y propose Carpaccio de saumon sauvage aux \u00e9pices douces, cr\u00e8me de yaourt aux herbes fra\u00eeches, Trilogie de sashimis sur glace pil\u00e9e, Tartare de thon au lait de coco et citron kumbawa\u2026 Mais \u00e9galement une s\u00e9lection de mini-brochettes (12 euros pour 2 personnes ou 20 euros pour 4 personnes) aux saveurs multiples : Thon au s\u00e9same, Poulet au satay et cacahu\u00e8tes, Crevette au curry et ananas, B\u0153uf marine\u0301 ail et gingembre, Courgette au thym et citron\u2026 Une v\u00e9ritable parenth\u00e8se raffin\u00e9e \u00e0 d\u00e9couvrir tout au long de la journ\u00e9e.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>L\u2019H\u00f4tel Renaissance Aix-en-Provence accueillait il y a peu le chef Arnaud Davin.
