Ouvert en septembre 2014, le lieu met \u00e0 l\u2019honneur des chefs fran\u00e7ais et \u00e9trangers de renom, qui investissent les cuisines du restaurant durant trois sema<\/p>\n<p>ines. <br \/>Apr\u00e8s Giovanni Passerini, G\u00e9rard Cagna, Julien Perrodin, Gr\u00e9goire Rousseau, Matthieu Dupuis Baumal, Keysuke Matsushima, Gilles Stassart, Franco Bowanee et Karina Laval, c\u2019est au tour de Fran\u00e7ois Gagnaire de se pr\u00eater au jeu. <br \/>Apr\u00e8s avoir fait ses classes aupr\u00e8s des plus grands (Alain Chapel, Pierre Gagnaire, Guy Lassausaie), le chef ouvre son restaurant gastronomique en 2001 au Puy-en-Velay, r\u00e9compens\u00e9 d\u2019une \u00e9toile en 2006. Apr\u00e8s avoir \u00e9t\u00e9 d\u00e9cor\u00e9 de la m\u00e9daille de l\u2019Ordre National du M\u00e9rite en 2009, il reprend les cuisines de l\u2019H\u00f4tel du Collectionneur. Enfin, apr\u00e8s sa r\u00e9sidence au Cercle, Fran\u00e7ois Gagnaire devrait relever un nouveau d\u00e9fi\u2026 Dont le magazine Le Chef ne manquera pas de vous faire part. <br \/>Le chef exprime ainsi toute sa cr\u00e9ativit\u00e9 du 5 au 30 mai 2015, \u00e0 travers un menu \u00e0 4 plats (52\u20ac) comprenant, entre autres, l\u2019Omble Chevalier, mousserons, blettes, fumet r\u00e9glisse et caf\u00e9 et Feuilles \u00e0 feuilles au miel de romarin, fraises gariguettes, chiboust verveine, dacquoise.
