{"id":4140,"date":"2015-04-14T09:44:00","date_gmt":"2015-04-14T09:44:00","guid":{"rendered":"http:\/\/www.cuisine-virtuelle.com\/wordpress\/?p=4140"},"modified":"2015-04-14T09:44:00","modified_gmt":"2015-04-14T09:44:00","slug":"david-mehr-remporte-le-trophee-masse-selection-alsace-lorraine-2","status":"publish","type":"post","link":"https:\/\/www.cuisine-virtuelle.com\/wordpress\/david-mehr-remporte-le-trophee-masse-selection-alsace-lorraine-2\/","title":{"rendered":"David Mehr remporte le Troph\u00e9e Masse s\u00e9lection Alsace-Lorraine"},"content":{"rendered":"<p>David Mehr du restaurant Le Buerehiesel \u00e0 Strasbourg est le grand gagnant de la 13\u00e8me s\u00e9lection Alsace-Lorraine du Troph\u00e9e Masse qui s\u2019est d\u00e9roul\u00e9 au lyc\u00e9e d\u2019h\u00f4tellerie et du tourisme Alexandre Dumas \u00e0 Illkirch en Alsace, le 14 avril dernier. <br \/> Le jury, pr\u00e9sid\u00e9 par Olivier Nasti, MOF et chef doublement \u00e9toil\u00e9 du restaurant Le Chambard \u00e0 Kaysersberg et Alain Le Cossec de l\u2019Institut Paul Bocuse, MOF et directeur technique de l\u2019ensemble des s\u00e9lections, a \u00e9valu\u00e9 les candidats sur trois d\u00e9gustations : un plat et deux r\u00e9aslisation de type \u00ab cocktail \u00bb, \u00e0 savoir un club sandwich r\u00e9invent\u00e9 et une escalope de foie gras chaude. <br \/>Respect du th\u00e8me, esth\u00e9tisme, go\u00fbt, ma\u00eetrise de la cuisson, harmonie des garnitures, pr\u00e9sentation, tels ont \u00e9t\u00e9 les crit\u00e8res retenus par le jury. <br \/>Fort d\u2019un Baeckoeffe au foie gras de canard, un Club sandwich au foie gras et \u00e0 la volaille et une Escalope de foie gras de canard po\u00eal\u00e9e, asperge blanche d\u2019Alsace et \u00e9pine vinette, David Merh a remport\u00e9 avec brio cette s\u00e9lection r\u00e9gionale. Martin Fran\u00e7ois de la Carambole \u00e0 Schiltigheim et Paul Barrague de l\u2019Auberge Saint-Laurent \u00e0 Sierentz compl\u00e8tent respectivement le podium. <br \/>Les prochaines s\u00e9lections r\u00e9gionales se tiendront \u00e0 Lyon \u00e0 l\u2019Institut Paul Bocuse sous la pr\u00e9sidence de Nicolas Sale le 15 juin, \u00e0 Marseille le 5 octobre et \u00e0 Nantes sur le salon Serbotel, du 18 au 21 octobre prochains.
